From Amla Tree to Jar
Fresh Amla Harvest
Our process begins with fresh Indian gooseberries (Amla) harvested directly from the tree. Only firm, mature fruits are selected to ensure the perfect balance of natural sourness and texture. The amla fruits are collected in small batches during peak season to preserve freshness and maintain the authentic flavour that traditional pickles are known for.
Thorough Cleaning & Sorting
Freshly harvested amla fruits are washed thoroughly in clean water to remove dust and impurities. Each fruit is carefully sorted to ensure only healthy and high-quality amla goes into the pickle. This step is essential for maintaining hygiene and ensuring the natural taste of the fruit remains intact.
Natural Sun Curing
After cleaning, the amla fruits are spread under natural sunlight on clean cloth sheets. The fruits are slowly sun-cured for several days, allowing excess moisture to evaporate naturally. This traditional sun-curing method helps intensify the flavour and prepares the amla for blending with spices.
Traditional Salt Curing
The sun-prepared amla fruits are layered with natural salt and placed inside large glass jars. This curing process allows the fruit to slowly soften while absorbing salt evenly. The jars are kept under sunlight for gradual fermentation, developing the deep tangy flavour that makes traditional amla pickle unique. after 15dyas we add spices to it and keep it for curing in sun.

Premium Hygienic Packaging Once the pickle reaches its perfect flavour and maturity, it is carefully packed into premium food-grade glass jars. Each jar is sealed hygienically to preserve freshness, aroma, and taste. This packaging protects the pickle while maintaining the authentic homemade flavour until it reaches your kitchen.
