How We Make This Heritage Pickle

2. Cutting & Cleaning: Mangoes are washed, dried, and cut into thick pieces with the skin on.
3. Salt & Turmeric Curing: Coated in rock salt and haldi, left to release moisture for 24–48 hours.
4. Masala Prep: Yellow mustard, onion seeds, cumin, Kashmiri red chilli, black pepper, coriander powder — all without garlic.
5. Mixing & Oil Coating: Mango pieces deeply coated in spices and drenched in cold-pressed mustard oil.
